Broccoli Bean Salad & Treat!

This quick and easy salad is one of my favorite things to eat for lunch.  The cannellini beans are protein packed and will keep you feeling full! I usually make a big batch on Sunday night and package it up into containers to take with me for lunch throughout the week.

 Ingredients:
1 can cannellini beans, rinsed and drained
1 bell pepper, chopped
1 cup uncooked broccoli, chopped
1 handful of grape tomatoes
1 cup fresh mozzarella, cut into chunks


Directions:
Combine all ingredients in bowl.  
Make dressing: 2 coarsely chopped garlic cloves, salt and pepper to taste, 1 part balsamic vinegar to 2 parts extra virgin olive oil.  If possible, let the salad sit overnight so the dressing gets absorbed into the ingredients.
